We all live busy lives.. Our days are spent running , finishing one errand after the other in an incessant list of things to do.. It is frantic and hectic and at times makes you feel like you just cant go on anymore. You need a break.. and rightly so!!
This breakfast recipe is an easy , 10 minute job for busy moms and working people like us... Its for the mornings when you want to break "fast" like a queen!
Without further ado, lets get started on this short and sweet lil thing..
Bread ( white , brown, multigrain, oat n raisin..anything.. )
Cheese 2 cubes (processed cheese grated )
Colored vegetables cut into small dices ( Bell peppers, the more colorful , the better)
Tomato 1 - diced fine
Red Onion - 1/2 diced fine
Carrot - 1 grated fine
Green chillies - 2 chopped, remove seeds.
Salt acc to taste,
Pepper - 1 tsp
Oregano - 1 tbsp
Basil - 1 tbsp
How to :
Start by putting the bread on a flat plate , keep everything ready so that you can assemble all at one.
Pre heat oven at 180deg C.
On a slice of bread, put some grated cheese, top it up with the onion and the capsicum, the tomato, the carrots and chillies.
Sprinkle the seasoning on top of it
Drizzle with olive oil
Pop it into the oven for 8-9 mins till the cheese is bubbling and the toast is crisp.
Enjoy hot with a cold glass of Litchi shake...
