Paneer Butter Masala

 


Life has been pretty darned bad and hectic these last seven days...and I have been a helter -skelter running- harried-worried-scared mom!

As I rejoiced at the onset of monsoons in Raipur,  at the blooms flowering away gloriously in my garden and the gorgeous dark clouds visible in the horizon...little did I know that my joyous celebrations would be cut short drastically.. My little monkey ( that's my 2 yr old daughter for the uninitiated) fell prey to the monsoon carnival hosted by viruses and promptly fell sick with a bad case of gastroenteritis!!
Needless to say, mood for celebration was OVER!!!

Lets just say I have been a pretty harried mom for the last week.. When your little one is sick and you are the sole care taker for the major part , you hardly get time to eat a peanut butter sandwich.. forget about making something delicious that this season calls for....

So anyways after going for a week without some good food ( not counting the banana choco cake I made ) I was definitely feeling sick myself!
I diagnosed myself with a case of withdrawal from gluttony!!
And the treatment had to be started pronto... and by that i mean , make use of the time baby is sleeping and get started harried mom!!

Off I went riding into the kitchen on my broom...  va va vrooom!!
(Yes... i can be a witch when I am mad) . Do not be afraid... Be sweet and read this ranting rambling post, and you will be safe... or I just might turn you into a tomato!!  ;)

And guess what I found in the fridge??? NOTHING. Thats right...nothing green that is... but there was some paneer and some yumm red tomatoes and yes praise be to the Lord , some fresh cream!!!

Yay... what more could one want in life?? Immediately my mind jumped to pasta ( Pasta freak.. thats me)!
Fir khayal aaya bechaare hubby ka ( Eng : then my poor hubby came to my mind )
So after some more head scratching I had my Eureka moment.. Yes!! Paneer Butter Masala!!! Eureka eureka eureka!!!

Have you ever seen so excited at such a simple dish?? This must tell you how starved I was by now!! ;)
Anyways its really easy ..and a common affair in my kitchen and our tumms n tongues seem to love it ( not to mention my love handles ) :P

  • Ginger paste

    • Paneer (cottage cheese) cut into triangles
      500 grams
    • Butter
      5 tablespoons
    • Oil
      1 teaspoon
    • Bay leaves
      2

      2 one-inch

    • Coriander seeds crushed
      2 tablespoons
    • Onion sliced
      1 medium
    • Ginger paste
      2 teaspoons
    • Garlic paste
      2 teaspoons
    • Coriander powder
      1 teaspoon
    • Red chilli powder

    • Tomatoes chopped
      5-6 medium

    • Kasoori methi crushed
      1/2 teaspoon

    Method

    Step 1


    Heat three tablespoons butter with one teaspoon oil in a kadai. Add bay leaves, cloves, cinnamon, red chillies and half of the crushed coriander seeds. Sauté for half a minute.

    Step 2


    Add onion and stir-fry for thirty seconds and add ginger paste and garlic paste. Cook for another thirty seconds. Add coriander powder, red chilli powder and tomatoes. Cook on high heat till oil leaves the masala. Puree the mixture.

    Step 3


    Heat the remaining butter in a pan, cook the pureed mixture for two minutes. Add paneer pieces and salt. Add half a cup of water. Cook covered on low heat for five minutes.

    Step 4


    Sprinkle kasoori methi and mix in lightly. Remove from heat and mix in cream. Serve hot, garnished with remaining crushed coriander seeds.
