Chutney.... how do I begin to describe thee!!??
A potpourri of many ingredients, much like my beloved India...
There's a certain method to madness in making a chutney..I don't know what it is, except that the key to a perfect chutney is to taste taste and taste while making it!!
It can be drizzled over chats of any permutation and combination, dipped into pani puris, added over bhel or if you are like me, licked by itself !!
Yes, it is delicious. and it is very Indian.
However it is anything but boring....
Infact this particular date and tamarind chutney is so layered with flavors that when you experience it with a lick of your finger ( fine....taste from the spoon...) is sheer sudden burst of myriad of flavors!!
Somehow, during the cooking process , the different ingredients fell in love, got married and procreated something oh so wonderful and flavourful that it made me dip in again!!
Without much ado, let me share this easy peasy thing with you...
But you have to promise to make this deliciousness next time you make some snacks... Done??
Here goes...
Ingredients:
Tamarind paste 3 tbsp
Water 500 ml
Jaggery 100 gms
Dates chopped 6-7
Salt ..acc to taste
Red chillie powder 1 tsp
Saunf or fennel seeds 1/4 tsp
Dried ginger powder 1/4 tsp.
Method:
Combine all the ingredients in a sauce pan..
Let it come to a quick boil
Simmer for 20 mins or till thick and reaches a honey like consistency.
Cool in the fridge and serve with fried snacks!!
Simply yum!!
