
I crave light food...on certain days!!
Today I was in the mood for a simple,light lunch that wouldn't make me feel too guilty.
So i threw in a bunch of stuff together, drizzled over some yumm lime vinaigrette and my lunch was ready!!
Isn't that a dish you wanna have handy??
Lets get started shall we??
Ingredients:
Cucumber - skin on, cut in thin rounds
Carrot - ribboned
Radish - thin rounds
Tomato - quartered
Red Bell Pepper - thin long strips
Green Bell Pepper - thing long strips
Green apple - thin strips
Pear - quartered
Orange segments (optional) - segmented
Green chillie - chopped fine
Ginger - minced
Parsley - chopped
For the Lime vinaigrette
1/4 cup lime juice( i use fresh)
1/4 cup fresh orange juice
( freshly squeezed)
1 1/2 teaspoons honey
1/4 cup orange zest
1/8 cup sugar
1 tsp dijon mustard
Salt
Pinch white pepper
mixed greens (parsley, coriander, dill, mint, basil) ..you can of course use aragula, rocket, fennel too!!
1 cup plus 2 tablespoons light extra-virgin olive oil
Mehtod:
Put all the chopped veggies in a mixing bowl. Put in the fridge.
To make the dressing :
Place lime juice, orange juice, honey, orange zest, mustard and sugar in a
large bowl. With a whisk in 1 hand and the oil in another, slowly begin
to add the oil until it's all gone. Season with salt and white pepper,
to taste. The finished product should look like it has significant body,
taste semi-sweet and with a touch of tartness. Toss desired amount with
mixed greens, and serve.
